For cheese without rennet we need:

1. 5 l of milk (we used whole milk with 3. 5% fat).

1 teaspoon of salt.

230 g of 20% sour cream.

3-4 eggs.

Optional:.

Herbs to taste.

Spices to taste.

Procedure:

We pour milk into the pot, add salt and stir..

Place the pot on the stove and heat on medium temperature..

Break eggs into a bowl and add cream.

Beat with a whisk until smooth.

When the milk starts to boil , add the egg mixture.

We wait until the milk starts to boil again.

Reduce the temperature and cook 5-7 minutes , stirring occasionally.

We turn off the stove, put a strainer in the bowl and line it with cheesecloth..

Then we pour in the milk mixture.

When the whey drains, carefully lift the cheesecloth and transfer it to a separate clean bowl.

Then weight the cheese mixture in cheesecloth and wait until all the whey has run off.

This whole process takes about two hours.We can serve.

Tips:

Herbs: You can add chopped herbs such as dill, chives or basil to the cheese.

Spice: For a more spicy taste experience, you can add a little ground black pepper or paprika.
