Healthy homemade chalamada: Without chemicals, even in winter it tastes like freshly prepared!

We need:

1 kg of white cabbage.

1 kg of tomatoes.

800 g of cucumbers.

3-4 peppers.

2 onions (or 1 large one).

2-3 carrots.

3-4 tablespoons of salt.

3-4 tablespoons of brown sugar.

3 tablespoons of vegetable oil.

5 tablespoons of apple cider vinegar (1-2 tablespoons per 700 ml glass).

black peppercorns.

Procedure:

Wash the cucumbers thoroughly under running water.Then we put the cucumbers in a bowl of water and let it stand..

It is necessary to taste the cucumbers, whether they are not bitter.Cut (or grate) the cabbage into thin strips.

We roughly grate the carrot and add it to the bowl with the cabbage.

Clean the pepper , remove the seeds and cut into slices.

Add the peeled onion into thin slices and the vegetables to the cabbage.

Remove the ends from the cucumbers and cut into thin slices..

Add 1. 5 spoons of salt, 2 spoons of sugar to the container with vegetables (without cucumbers yet) and mix well by hand..

Then add the cucumbers to the vegetable mixture and mix carefully.

Cut the tomatoes, add to the vegetables, mix and let stand for an hour..

In the meantime we will sterilize the jars and lids..

After an hour we transfer the chalamada without juice to a pot and heat it to approx. 80-90°C.

Add oil, mix and heat the vegetables..

Then add 1 spoonful of salt, black pepper and mix well..

Reduce the temperature, add 5 spoons of vinegar and mix.

Taste the mixture and optionally season..

We heat the chalamada until it is hot.

Then we transfer the chalamada into hot glasses and press down gently with a spoon.

Place the glasses in a pot of water (the water must be the same temperature as the chalamada) lined with a towel.

Then cover the glasses with lids and tighten gently..

Let it cook over low heat 10 minutes..

After the time has passed, tightly tighten the lids.

Cover the glasses with a blanket and let them cool.

Chalamada can be consumed under two weeks..
