Rozteks are very soft and fluffy, and if you have leftover apples at home right now, this is definitely the best way to use them.
We also liked them with jam, poppy seed and walnut filling.
We will use a 200 ml volume mug to measure the ingredients.
We need:
2 cups of plain flour.
2 cups of semi-coarse flour.
1 cup of lukewarm milk.
125 g of melted butter.
Lemon zest from 1 lemon.
1 cube (fresh) yeast.
2 teaspoons of salt.
3 spoons of granulated sugar.
3 eggs.
200 ml sour cream.
Fillings:.
Apple filling:.
4-5 apples, sugar and cinnamon.
Walnut filling:.
Ground nuts, sugar, 1-2 dl milk.
You can also try cottage cheese, poppy seed or jam filling.
For rubbing:.
2 egg yolks + 2 spoons of milk.
Procedure:
Sift the flour, add sugar, salt, eggs, sour cream, grated lemon peel.
Add 1 tbsp of sugar, 2 tbsp of flour to lukewarm milk and crumble the yeast.
Let the yeast rise.Add the leavened yeast to the flour and also the melted butter.
We make a smooth dough with our hands, which is sticky, don’t worry, we always flour our hands.
Knead for at least 10 minutes , leave to rise in a warm place.
In the meantime, prepare the fillings: grate the apples, mix them with sugar and cinnamon.
Pour hot milk over the walnuts, add sugar.We proceed in the same way with the poppy seed filling.
Turn the dough onto a floured work board and divide into 8 loaves.
Then we will divide it into smaller loaves, from which we will make 3-4 smaller loaves.
Roll out each loaf into a circle.We make cuts in the upper half of the dough with a tool or a knife.
Put the filling on the bottom side.Remove the juice from the apples with a spoon so that it does not leak during baking.
Roll up, place on a baking sheet lined with baking paper.
Mix the egg yolks with milk, beat and brush the rolls.
Preheat the oven to 190 degrees and bake 20-25 minutes until golden.
