I got the recipe for these rolls on the Makarska Riviera – the locals call them Pamuk Kiflice , which translates to Cotton Rolls.And indeed, the dough is as soft as cotton.
Rolls are a huge success here, and that’s why I bake them regularly.At the end of the article, I have attached a video recipe that will make the preparation of this pastry even easier.
The softest roasts in the world, they really are like cotton wool, a mug recipe!
We need:
2 cups of milk.
¾ cup of oil (180 ml).
2 egg whites.
1 spoon of granulated sugar.
1 packdry yeast.
approx. 890-900 g of plain flour (I used half smooth and half coarse).
1 teaspoon of salt.
2 egg yolks for brushing.
Fill Optional): .
flavored cottage cheese.
jam.
poppy
nuts.
1 mug = 200 ml.
Procedure:
Pour milk, oil into the pan add sugar, egg whites, yeast and mix..
Add half of the sifted flour, mix and add the other half of the flour.
We mix a uniform dough – the dough is soft and sticky.
Transfer to a floured work surface, where we knead and add flour as needed.
Knead a uniform loaf.Place the loaf of dough in an oiled bowl and grease the dough itself with oil.
Cover with a plastic bag or foil and leave to rise in a warm place – the dough doubles in volume.
Divide the risen dough in half.
We divide half of the dough into 4 loaves and each half again, so from one half of the dough we get 8 pieces (loaves).
While we are working with one, cover the other loaves and the remaining half of the dough so that they do not dry out.
Roll out the loaf, layer the filling according to your taste (salty or sweet) on one half, and cut the opposite side of the dough with a rolling pin or a knife.
We roll up and twist the ends (to get the shape of a rotisserie).
Place the rotisserie rolls prepared in this way on a baking sheet lined with baking paper.
Cover them while the oven heats up.Then rub the egg yolk on the rotisserie rolls.
Bake at a temperature 190 degrees until golden brown, approx. 15 minutes.
