Are you in the mood for a really bomb dessert?
Then you have to try this caramel cheesecake.
This recipe was inspired by my good friend’s caramel dessert, but I modified it according to the Slovak recipe.
The result is more than delicious.
We need:
Base:.
250 g of caramel biscuits (Lotus).
120 g of butter.
Cream:.
500 g soft cottage cheese.
250 g of mascarpone.
250 ml vegetable whipped cream.
120 g powdered sugar.
Caramel:.
130 g sugar.
70 g of butter.
100 ml of whipping cream.
Form with a diameter of 23 cm.
Procedure:
First, we prepare the cheesecake base.
Blend the caramel cookies in a blender.
Add the melted butter to them and mix well in a bowl by hand so that the mass is combined as well as possible.
Press the mixture into the baking mold and put it in the refrigerator.
Let’s prepare cream :
Mix the cottage cheese with powdered sugar and mascarpone.
In another bowl, whip the vegetable cream into whipped and mix it into the curd mixture by hand.
Layer the cream on the biscuit base, put it in the fridge and prepare the caramel.
Let the sugar dissolve in the saucepan, stirring constantly.
Carefully add the whipped cream and mix until you get a smooth caramel.
Remove from the heat and let it cool so that the caramel is still warm/liquid, but not hot at the same time.
Simply pour on top of the cheesecake and set aside to cool.
Finally, we can decorate with crushed cookies and caramel.
